Fried catfish is an icon of Southern cooking and for many, there simply isn't any other way to prepare it! There's just something about a cornmeal crust that pairs just perfectly with catfish…

Cold mornings have me craving a warm, delicious br Cold mornings have me craving a warm, delicious breakfast treat... this golden brown, vibrant Cranberry Loaf does just the trick. It is moist, light and accented with bright orange zest. Plus, its’s gluten-free and refined sugar-free so you can have your cake, and eat it too 😉 delicious served with a cup of coffee, find the recipe below and let me know what you think! 

Ingredients
1⅓ C coconut sugar, divided
½ C chopped walnuts
¼ C sunflower seeds
3 T chia seeds
2 t cinnamon
1 t cardamom
1 C gluten-free baking flour
1 C almond flour
1 t baking powder
½ t salt
1 egg
1 C milk
3 oranges, zested
⅓ C coconut oil
1 C coarsely chopped fresh or dried cranberries

Instructions
1. Preheat oven to 350°F. Grease and flour bottom and ½ inch up the sides of a 9x5x3-inch loaf pan.
2. In a small bowl, stir together ⅓ cup coconut sugar, walnuts, sunflower seeds, chia seeds, cardamom, and cinnamon.
3. In a large bowl, stir together the remaining 1 C coconut sugar, gluten-free flour, almond flour, baking powder, and salt. In a med bowl, beat egg with fork. Stir in milk, orange zest, and coconut oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in the cranberries and half the nut and cinnamon mixture.
4. Spoon half batter into the prepared pan. Sprinkle with remaining nut and seed mixture. Using a thin metal spatula or table knife, cut down through batter and pull up in a circular motion to marble the cinnamon mixture into the batter.
5. Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for ten minutes. Remove from the pan and cool completely on a wire rack. Slice and serve immediately.
I don’t know about you, but all I want on these I don’t know about you, but all I want on these snowy winter nights is soup. And not just any soup, but a hearty, creamy, filling bowl of hot soup.

Turn your childhood favorite Strawberry Italian So Turn your childhood favorite Strawberry Italian Soda into a stunning grown-up beverage 🍓 Creamy, sparkling, sweet, and always served over ice, this version is effortlessly elegant and avoids all the processed sugar. Chamomile-infused almond milk is the secret ingredient here and it gives the drink a relaxing, botanical twist you will absolutely love. Add 2 ounces of vodka or gin for an optional adult spin!⁣
⁣
INGREDIENTS⁣
⁣
ITALIAN SODA⁣
1 C ice, crushed or cubes⁣
⅔ C Almond Chamomile Milk (recipe below) ⁣
1 C unflavored seltzer water⁣
4 oz strawberry or cherry syrup ⁣
½ C half & half⁣
⁣
CHAMOMILE ALMOND MILK⁣
4 C filtered water ⁣
4 chamomile tea bags⁣
2 small dates, pitted⁣
1 C almonds, soaked min 8 hours⁣
½ t vanilla⁣
Pinch sea salt⁣
⁣
STRAWBERRY SYRUP ⁣
2 C fresh strawberries, stemmed, thinly sliced⁣
1 C organic maple syrup (or honey)⁣
⁣
Chamomile Almond Milk Instructions⁣
1. Add water, tea, and dates to a small saucepan. Cover & bring to a simmer.⁣
2. Remove from heat & allow liquid to steep & cool.⁣
3. Meanwhile, drain almonds & place in blender with salt + vanilla.⁣
4. After infused water has steeped ~10 minutes, remove dates & add to blender. Remove the tea bags & discard. ⁣
5. Add strained liquid to blender & blend on high for about 1 minute.⁣
6. Strain through a nut milk bag into a large bowl & transfer to a sealable container.⁣
⁣
Italian Soda Instructions⁣
1. Place strawberries in a small bowl & cover with honey. Place in fridge for a min of 24 hours to soak. After soaking, strain out the solids & reserve the syrup. ⁣
2. Add ice to a 16-ounce or large glass. Pour in the milk + seltzer. Pour strawberry syrup over ice and swirl in half & half. Top with whipped cream & strawberries and serve! ⁣

With the Super Bowl this Sunday, we’re all think With the Super Bowl this Sunday, we’re all thinking of what our go to game time drink will be! I highly recommend The Rainier, a bourbon based cocktail that will be a fan favorite. Cinnamon, allspice, and a couple dashes of orange bitters - you can’t go wrong. This seasonal drink is delicious warm or chilled 👌🏼

RECIPE
Serves 1

3 oz apple cider
3 cinnamon sticks, plus more for garnish
1 oz Freeland Bourbon
1 oz Escubac Sweetdram 
¼ oz Allspice dram
1 teaspoon maple syrup
3-5 dashes orange bitters
1 orange slice, for garnish

1. Place all ingredients in a saucepan over low heat.
2. Bring to a simmer and cook for 10 minutes.
3. Serve in a hot toddy glass with a orange slice and cinnamon stick for garnish.
