It’s New Years weekend! Are you ready? There’s something amazing about stepping into a brand new year. I always find it somewhat surprising that it’s already here as it comes around so quickly it seems, so there’s this sense of feeling that I’m not quite ready. But, then underlying this feeling is the thrill that it is in fact here, and how refreshing it really does feel that everything is brand new!
I always like to take time to reflect on the past year and look forward, realigning my vision for what I want to pursue in life, both in career and personal goals. I think it’s so healthy to do, and something that I aim to do at least 2-3 times a year. Life goes so quickly and I want to ensure always, that my efforts are aligned with my core vision for how I want to live life : to love well, give generously, and share beauty with the world, all while operating out of rest. So I’ve partnered with Highland Park Whisky to make this New Year’s drink, perfect to serve at your party this weekend! I was so eager to try out their specialty Highland Park Dark Origins Whisky as I’m typically used to a lighter malt whisky. This whisky uses twice as many first fill sherry casks than in the classic Highland Park 12 Year Old – this process provides a dark, rich flavor. When I first tried it straight, I was wonderfully surprised to find a strong, sweet smoke note along with a rich spice and chocolate taste.
I paired this rich flavor with warm apple cider and brought in a twist to your traditional recipe by adding in pomegranate juice and citrus. It brightens the flavors and pairs perfectly with this rich whiskey. The recipe is developed for 6, so you can put a pot on the stove and allow your guests to enjoy freely throughout the evening!

Smoked Whiskey Hot Apple Cider
Servings: 6 glasses
Ingredients
- 4 1/2 c. fresh apple cider cold pressed
- 2 c. pomegranate juice
- 18 orange peel slices about 3-4 oranges
- 1 1/2 apples sliced in wedges
- 6 cinnamon stick
- 18 dried rose hips
- 12 star anise
- 6 t. butter
- 6 t. pure maple syrup
- 12 oz Highland Park Dark Origins Whisky
Instructions
- Warm all ingredients except for whisky on stove in medium sized saucepan on medium low. Do not boil, bring to simmer and keep on low. Just before serving add whisky and warm slightly.
