It’s the height of summer and is it ok to say that I’m already looking forward to the first sign of fall? It’s my favorite season of the year, and I look forward to the shift of seasons earlier than most. Perhaps it’s because my studio is surrounded by lush, beautiful trees and I keep imagining them turning beautiful colors and having that change so present with all these windows. Combine that with some exciting Autumn plans, Secret Suppers, travel and more, and how could I not look forward to it?
But for now, definitely savoring summer, taking as many walks and adventures as possible! This recipe for Fresh Clam, White Wine Thyme & Caramelized Onion Pasta is as easy as it gets for an impressive dish to make any night of the week or to treat guests to for a weekend meal. You can even make this outdoors – it would be incredibly delicious prepared over a campfire! I was inspired to make this dish after trying a version of it at a recent Secret Supper team meeting made by the chefs I work with, Mona and Jaret and couldn’t help but come home and re create my own version of it. I used my new Falk paella pan and am so in love!

- 1/2 c. butter
- 2/3 c. wine
- few sprigs of fresh thyme
- 1 medium onion
- 1 package linguini pasta
- 1/2 lb fresh clams
