Radishes. Shall we talk about them for a moment? They are so delicious and wouldn’t you agree, soooo beautiful?! I thought this was a perfectly fitting post to release on the first day of spring. Can you believe it by the way?! It’s so exciting.
So one of my favorite easy throw together dishes is fresh radishes from the market, cultured butter and sea salt. And the greatest thing about this vibrant little vegetable is that you can serve it so many ways. I love them sautéed in butter in a cast iron skillet for a few ( not too long though so they still stay a bit crunchy), then finishing them with large flake sea salt. This paired with a poached egg is heaven!
For these spring radish toasts, I sliced them thin on a mandoline slicer and could’t stop snacking on them as I was making the sandwich! So crunchy and fresh.
Ok but back to the recipe before I get too carried away with endless radish possibilities…. This sandwich is incredibly easy as you’ll see in the recipe below. It’s notable to mention however, that the quality of your ingredients is key here. Get only organic, fresh radishes ( preferably from the market) and if you can, make your own homemade ricotta cheese! Also incredibly easy!

Spring Radish Toast
Ingredients
- Fresh bread any type, toasted or un toasted
- radishes
- ricotta
- micro greens
- fresh dill
- lemon infused olive oil or olive oil with a squeeze of fresh lemon juice
- sea salt
Instructions
- Start assembling your toasts by topping with a generous layer of ricotta cheese. Then add radishes, micro greens, and a sprig of fresh dill. Drizzle with lemon oil ( or lemon juice and oil) and finish with a pinch of sea salt.
