Spread one slice of bread with 1 tablespoon each of goat cheese and hummus.
Place a small handful (~1/4 cup) of spinach on top of the hummus
Add 6-8 slices of cucumber
Add 3-4 avocado slices
Add a few red onions
Add ~1 tablespoon micro greens
Add ~ 2 tablespoons of watercress or sprouts.
Optional: Add prosciutto
Top with second slice of bread.
Repeat with remaining ingredients to make a total of four sandwiches.
