Cool off with a refreshing summer berry shake made with strawberries, tomatoes and creamy yogurt. This dairy-free Summer Berry Shake tastes like a milkshake with a surprisingly sweet and savory twist.

It’s no secret that cherry tomatoes and strawberries are some of the most anticipated summer fruits. They’re so naturally sweet, juicy and stunning that it’s impossible not to get excited when they come into season. And while tomatoes and strawberries might not sound like the most classic flavor pairing, they’re a surprisingly delicious match. 

Both are naturally sweet, but the tomatoes add a nice vegetal, savory and almost herby flavor that perfectly balances the bold berry flavor. And to really maximize this flavor meld, I decided to turn them into a frosty, creamy and earthy shake. This is a cooling dessert you’ll want to enjoy all summer long, so go out and make the most of the season!

How to Make Strawberry-Tomato Shakes

It’s easiest to make this shake in a standing blender. But before you start blending, stick your serving glasses in the freezer to chill. This helps keep the milkshake from melting too quickly as you enjoy it. 

Here’s what you’ll need to make this delicious summer treat:

  • Almond milk. I use unsweetened plain. However, for a nut-free version, feel free to use your favorite plant-based or regular dairy milk. Oat milk would be delicious with the strawberries and tomatoes. 
  • Greek yogurt. You can make a vegan version of this shake by using your favorite vegan yogurt. Coconut yogurt is especially great. Thicker yogurt will give a creamier texture. 
  • Strawberries. Choose the freshest, plumpest and sweetest berries you can find. For a thicker shake, freeze the berries first. 
  • Grape tomatoes. These should also be frozen for the best texture. 
  • Raw honey or strawberry cane sugar. For a vegan swap for honey, use the strawberry sugar, maple syrup or coconut sugar. If you can find strawberry sugar, I highly recommend it, because you can also make the stunning sugar rim garnish on your glasses with it.
  • Chia seeds. These are great for thickening shakes.

Cool off with a refreshing summer berry shake made with strawberries, tomatoes and creamy yogurt. This dairy-free Summer Berry Shake tastes like a milkshake with a surprisingly sweet and savory twist.

Ingredients

  • 4 cups almond milk, unsweetened, plain
  • 1 ½ cup greek yogurt
  • 4 cups Harry’s strawberries, plus 2 each cut in half for garnish
  • 4 cups red grape tomatoes, frozen, plus 12 each for garnish
  • ¼ cup raw honey or strawberry cane sugar
  • 2 tablespoons chia seeds
  • 2 ½ cups crushed ice or cubes
  • ¼ cup strawberry sugar (for coating rim of glass)

Instructions

    1. In a large blender combine all ingredients and blend until well combined and smooth.
    2. Wet the rim of each chilled glass and coat the rims in strawberry sugar. Fill each glass with shake and arnish the rim with ½ strawberry and a skewer of 3 tomatoes.
    3. Serve immediately.
    4. Place 4 tall glasses in the freezer to chill.
    5. In a large blender, combine the almond milk, yogurt, 4 cups strawberries, 4 cups frozen tomatoes, honey/sugar, chia seeds and ice. Blend until well combined and smooth.
    6. Make 4 skewers with the reserved grape tomatoes, 3 tomatoes on each.
    7. Place the strawberry sugar on a plate. Wet the rim of each chilled glass and dip the rim in the strawberry sugar, turning to coat. Fill each glass with the shake and garnish with half a strawberry and a tomato skewer. Serve immediately.

Garnishes

I like to put some nice finishing touches on every glass. First, I’ll coat the rims in a dusting of strawberry sugar. This adds a pretty pink hue and texture to the glasses. Then I fix a strawberry half on each rim, and finally a skewer of tomatoes. 

If you don’t have strawberry sugar, you can use regular sugar or a mixture of regular and brown sugar for a nice textural and color element.
