We’re big on burgers around here. But not just any regular beef burger. In fact, our favorite burger recipes are nowhere near the heavy red meat patties you might be picturing. 

We love highlighting vegetables on burger nights with recipes like Dukkah Spiced Cauliflower Burgers. And now, we have a new recipe inspired by fresh local salmon. 

Making Salmon Sliders

Living in the Pacific Northwest, we’re spoiled for local, delicious fresh salmon. However, no matter where you live, you can also make these simple salmon patties with high-quality canned salmon if you prefer. It’s easiest to make the patties in a food processor. You want to blend the mixture into small enough pieces that it can stick together and hold its shape well as a patty. 

The other ingredients that help bind the salmon patties together are lightly beaten eggs and almond flour. The almond flour adds richness and a hint of nutty flavor. Plus, the patties stay gluten-free this way. 

 

For extra flavor, we’ve added fresh parsley, dill and whole grain mustard into the slider recipe. The fresh herbs add lightness and pretty specks of green throughout the burgers. And the mustard compliments the mustardy dressing on the arugula slaw topping.

Crispy Salmon Sliders with Lemon Arugula Slaw

Yield: 10 Sliders (3oz); Serves: 4-6

These versatile salmon patties are quick and simple to make and packed full of flavor. You can make them with fresh local salmon or canned salmon. These sliders are the perfect, lighter alternative if you are craving a burger for lunch or dinner.  

Ingredients

Salmon Patties

  • 2 pounds fresh salmon, skin removed (canned may be substituted)
  • ½ cup + 4 tablespoons olive oil
  • 1 teaspoon white pepper, ground
  • 1 cup diced red onion
  • ¾ cup diced roasted red bell peppers
  • 2 tablespoons minced garlic
  • ¾ cup chopped fresh parsley
  • ¼ cup chopped fresh dill
  • 3 tablespoons whole grain mustard
  • 4 eggs, beaten
  • 1 cup almond flour
  • 1 lemon, zested and juiced
  • 1 teaspoon kosher salt
  • 10 gluten-free slider buns

Lemon Arugula Slaw (Recipe Yields: 4 cups)

  • 12 ounces arugula
  • ½ red onion, very thinly sliced
  • 1 bunch scallions, thinly sliced
  • 1 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 lemon, juiced and zested
  • 3 tablespoons dill, fresh, coarsely chopped
  • ½ teaspoon salt
  • 1 teaspoon black pepper, freshly ground

Instructions

Salmon Patties

  1. Place the salmon, ½ cup olive oil, salt and white pepper in a food processor. Pulse until only bite sized pieces remain. Transfer to a medium mixing bowl.
  2. Gently fold the remaining ingredients into the salmon mixture, mixing thoroughly with your hands. Do not break apart the large pieces while mixing as these will provide excellent texture.
  3. Form 10 patties, each around 3 ounces. Place the patties on a large plate.
  4. In a large non-stick skillet, heat the remaining 4 tablespoons olive oil over medium-high heat. When hot, place the patties in the pan. Cook for 3-4 minutes per side or until crispy and golden brown. 
  5. Transfer the cooked patties to a paper towel to drain any excess olive oil.
  6. Assemble the sliders by placing a patty on the bottom bun and topping with a generous amount of the lemon dill mustard slaw. 

Lemon Arugula Slaw

  1. In a large bowl, combine the arugula, red onion and scallions.
  2. In a small bowl, whisk together the mayonnaise, both mustards, lemon juice, lemon zest, and dill until well combined.
  3. Pour the dressing over the arugula and onion mixture, toss to coat, and season with salt and pepper.

Serving Suggestions

These sliders are the perfect size to serve as an appetizer. Or, double up and serve two or more sliders as a full meal!

Whatever you do, don’t forget the lemony arugula slaw on top. This simple green salad is easy to throw together and adds a necessary topping of freshness and pop of acidic flavor to the dish. 

The slaw recipe calls for two kinds of mustard (Dijon and whole-grain), which really round out the nutty flavor to compliment the fresh lemon juice. However, if you only have one jar of mustard in the fridge, you can stick with what you have.
