How to Make Homemade Peppermint Bark

This stunning red and white candy looks impressive but is so fun and easy to make. You only need five simple ingredients to whip up a batch big enough to share. 

 

Choose good-quality white chocolate for your base. The flavor and texture both matter here, so opt for baking chocolate that will melt and re-harden well. The coconut oil will also help your white chocolate harden as it cools. Coconut oil is solid at room temperature, which will help keep your peppermint bark from melting. It also makes this a perfect edible gift to ship in the mail!

 

The next important ingredient in your homemade peppermint bark is peppermint essential oil. A few drops will transform your candy from tasting like chocolate and candy canes to an elevated and sophisticated peppermint confection. Be sure to use food-grade essential oil. If you can’t find it, though, pure peppermint extract will work. 

 

I like to finish off my chocolate and peppermint bark with a sprinkle of flaky sea salt. It adds a new texture and compliments the sweetness of chocolate and the boldness of peppermint for a well-rounded flavor in every bite.

Yield: about 1 pound

Ingredients

  • 1 pound white chocolate
  • 1 tablespoon coconut oil
  • 6-8 drops of food-grade peppermint essential oil
  • 12 candy canes, crushed to various sizes (about 1 cup)
  • 1 teaspoon flaky sea salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a heat-proof bowl, melt the chocolate and coconut oil in the microwave or over a double boiler. Pour the melted chocolate into the prepared baking sheet. Pick up the baking sheet and drop it onto the counter from 3 inches high several times to distribute the chocolate evenly. Add texture with a rubber spatula if you like. 
  3. Sprinkle the crushed candy canes evenly over the chocolate and sprinkle with sea salt. Store in a cool, dry place until solid, then break or cut the bark into pieces. 
  4. Store in an airtight container in the fridge for up to one year or 18 months in the freezer.

How to Store Peppermint Bark

One of the best things about this bark recipe is that it stores beautifully. You can make a big batch and store it for up to a full year in the fridge. It makes a festive snack all year long.
