Modern Mother’s Day + Belgian Waffles with Smoked Salmon, Crème Fraîche & Edible Flowers with Crate & Barrel

There is a quote by Bryan Adam Castillo that says “Life does not consist of minutes and seconds – it consists of moments, people and forgiveness”.

 

I wouldn’t be where I am in life without family and friends who root for me, challenge me, and support me. They remind me to keep running through the highs and lows of life.

Mother’s Day is about shining a light on the extra special person who does that for each of us. But I know that life is different for everyone. For me, that person happens to be my Mom. For others it might be a Grandmother, aunt, sibling, foster parent, or teacher. No matter who that is, I hope you enjoy doing something “with or for” the person you want to thank and celebrate.

This Mother’s Day I am celebrating my Mom. This post is dedicated to her, in honor of the never ending love and support she manages to give. Our friendship is something I treasure. She is back in Montana, but we stay connected. Her love could be felt if we were on different planets. I am eternally grateful.

My mother made many meals for our family. Because of her, this is one way I show my love and appreciate for others. Since my Mom cannot be here with me on this Mother’s Day, I decided to have a brunch to celebrate the women in my life who are friends and mentors.

Showing appreciation for those who love & nuture you is important.

This can be as simple as planning a little brunch at your place. You can be certain the first toast was dedicated to my Mom.

This recipe for Belgian Waffles with Smoked Salmon, Crème Fraîche & Edible Flowers is not only delicious but beautiful. Belgian Waffles with Smoked Salmon, Crème Fraîche & Edible Flowers

These waffles are equally delicious a beautiful. Makes for a stunning spring brunch!
Servings: 10 waffles

Ingredients

  • 6 Tablespoons butter melted
  • 240 g 1 ½ cups all-purpose flour
  • 81 g   ½ cup buckwheat flour
  • 1   teaspoon baking powder
  • 1   teaspoon sea salt
  • ½   teaspoon baking soda
  • 8 oz 1 cup creme fraiche (or greek yogurt)
  • 8 oz 1 cup buttermilk
  • 4 large eggs separated
  • 1 teaspoon vanilla
  • Coconut spray oil for waffle iron

Toppings:

  • 4 oz ½ cup crème fraîche
  • 250 g ½ pound  thinly sliced smoked salmon
  • 15 g ¼ cup finely chopped fresh chives
  • 15 g   ¼ cup finely chopped fresh dill
  • Edible flowers

Instructions

  • In small saucepan over medium heat, melt butter. Remove and allow to cool slightly.
  • In a medium bowl, add dry ingredients. Whisk to combine.
  • In a separate small bowl, whisk together creme fraiche, buttermilk, egg YOLKS, vanilla, and melted butter.
  • In mixer with whisk attachment, whip egg whites until light and frothy.
  • Pour wet ingredients (step 3) into dry ingredients (step 2). Gently stir, do not overmix.
  • With a spatula, fold the egg whites into the batter to make airy and fluffy.
  • Warm waffle iron and spray with coconut spray oil.
  • Once the waffle iron is warmed up, pour as much batter as you like into the iron to make the desired size.
  • After all your waffles have been made, add as much or little of the toppings to make a beautiful piece of art. Enjoy eating this feast with the women that have made a difference in your life!
