Just a few short weeks ago I was traveling and enjoyed a beautiful stop in Berlin, Germany. My sweet friend Marta invited Eva and I out on an early morning adventure, and even though we were incredibly tired from traveling so much (this was the last leg of our 3 week trip!), our hearts leapt at the excitement of what we could create together. And so, we ventured…

You can see the other part of this post here, as we actually did two photoshoots together that morning. I still can’t decide which was my favorite — they were both so whimsical in their own way!

I think there’s always something so magical about being in a forest. But then when it’s the peak of Autumn, with leaves all around and it’s the morning on a cold, misty day…. well it doesn’t get anymore magical than that! Seriously, it was perfect. And also very seriously, it was freezing cold and awfully damp. But, the beauty we captured was well worth every bit of it and I wouldn’t trade this experience for anything!

Marta made these tasty pumpkin Nutella bites dusted in sugar and perfectly sweet, the perfect pairing with a cup of coffee. All of this goodness combined with two sweet friends was just divine.

Pumpkin Nutella Bites

Pumpkin Nutella Bites

Recipe by Marta Greber of What Should I Eat For Breakfast Today

Adapted from this recipe on Thyme to Eat Blog.

  • ¾ cup water
  • ¼ cup pumpkin puree
  • 3/4 cup butter
  • 1 tbsp cane sugar (or brown sugar)
  • pinch of salt
  • 2 cups flour
  • 3 eggs
  • 3-4 tbsp nutella
  •  cup sugar
  • ½ tsp cinnamon
  • oil for frying

Directions

In a small pot, place pumpkin puree, water, sugar, salt and butter, bring it to boil over a medium heat. Take the pot off the heat and mix in flour. Let the dough cool for a few minutes and then start adding eggs, one at a time and mix them in. The dough is ready. 

Take about 1 tablespoon of the dough, gently form a small ball in your hands covered with a flour, flatten it and place about 1/2 tsp of Nutella inside. Cover the chocolate with sides of the dough and gently roll in your hands, so you get a small ball with chocolate inside. Repeat it with the rest of the dough. 

Heat an oil in a pan over a medium-high heat. Place balls inside and fry for about 10 minutes. Turn balls around, so it will get nicely golden all around. 

On a deep plate, mix sugar with cinnamon and roll each fried ball in it.
